Honey coconut cookies

  • 500 g. flour
  • 25 g. corn starch                        
  • 140 g. vegetable oil
  • 150 g. sugar
  • 25 g. G&J honey
  • 25 g. grated coconut
  • 50 g. water
  • ½ tsp salt
  • ½ tsp yeast
  • ½ tsp vanilla essence
  • 2 eggs

Put the sugar, the oil, the grated coconut, the water, the vanilla essence and 1 egg in a bowl and mix.

Add the flour mixed with yeast, corn starch and half a teaspoon of salt. Mix and knead for 3 minutes.

Extend the dough using a roller leaving it around 4mm thick.

Shape the cookies as you prefer. Put them in a tray covered with baking paper, whip the remaining egg and use it to paint the cookies.

Bake for approximately 15 minutes at 180ºC in a preheated oven.

Let the cookies cool down on the grill.
